1. Put sugar and water into pan, heat until sugar has dissolved, then add the chopped ginger.
2. Peel apples, halve and core.
3. Poach apples in the hot ginger syrup until soft but unbroken. This means cooking them very slowly indeed with the lid off the pan so that the syrup thickens.
4. Put into sundae glasses and decorate with more pieces of ginger.
Ingredients:
4 medium-sized perfect cooking apples
1-2 oz. crystallized ginger
2-3 oz. sugar
1/2 pint water
Cooking time: 25 minutes
