Duchess creams

1. Add grated rind to the custard while hot, then add gelatine dissolved in hot water.
2. Stir in the sultanas and crystalized peel and cool slightly, then add the orange juice. If this measures less than 1 gill add a little water.
3. Pour into sundae glasses and allow to set ligtly.
4. Decorete with pieces of orange.

Ingredients:

1 pint of sweetened custard (sauce consistency)
½ gill water
1 oz. sultanas
finely grated rind and juice of 2 oranges
½ oz. powdered gelatine
1 oz. crystalized orange peel
1 orange for decorating

Cooking time: 5 minutes
