Coffee and marshmallow foam

1. Put the marshmallows, cut into halves, into a basin and stand this over a saucepan of hot water.
2. Pour the coffee over the marshmallows and leave until dissolved.
3.Allow the mixture to cool, but no become really stiff again.
4. Stir in the whipped cream, or evaporated milk or custard, the nuts, cherries an peel.
5. Lastly fold in the very stiffly beaten egg whites.
6. Pile into glasses and decorate with tiny pieces of cherry or pineapple.

Ingredients:

8 oz. marsmallows
2 egg whites
1 good tablespoon chopped blanched almonds
¾ gill strong hot coffe
1 gill whipped evaporated
milk (or creamy custard or cream)
1 good tablespoon chopped glacé cherries or pineapple
1 dessertspoon crystallized orange peel

Cooking time: few minutes
