1. Cook the rice until just tender in boiling salted water.
2. Strain and mix with the prawns or shrimps and all the other ingredients.
3. Put into a basin or mould and leave until the mixture holds its shape and the rice is quite cold.
4. Turn out on to a bed of lettuce and garnish with sliced tomatoes, cress, water-lilies of radish.
5. Save a few shrimps to put on top of the salad.
Ingredients:
3 oz. rice
1 pint prawns or shrimps
1 tablespoon oil seasoning
2 tablespoons chopped cucumber
1 tablespoon vinegar
few cappers (not essential)
little chopped parsley
to garnish
lettuce, cress, tomatoes
radishes
Cooking time: 20 minutes
