1. Dice the onion finely and fry in the butter.
2. Add the skinned tomatoes, wine and brandy and simmer for about 10 minutes.
3. Remove all lobster meat from shell and claws, slice and add to the tomato mixture. Heat for about 5 minutes.
4. Serve with crisp toast.
Ingredients:
1 large or 2 medium lobster
2 oz. butter
salt
pepper
2 – 3 large tomatoes
1 onion or 2 shallots
1 gill white wine
1 gill brandy
Cooking time: 20 - 25 minutes
