1. Brush grid and steak with butter or olive oil.
2. Season steak and if wished break down tissues by “banging” with rolling pin or meat tenderiser. Or you may care to marinade the meat by leaving it to stand for 1 hour in a mixture of oil and vinegar to which you add seasoning, including a pinch garlic salt or crushed clove garlic.
3. Put on to grid of grill pan with tomatoes, mushrooms at bottom of pan.
4. Cook rapidly on either side under hot grill for a few minutes.
5. This is sufficient for people who like their steak “rare” (underdone) in the centre, but if you like it well done, lower the heat and cook steadily.
6. Garnish with watercress, parsley butter perhaps adding a dash Worcester sauce instead of lemon, asparagus tips, fried onion rings, croutons of bread.
7.Serve with mixed vegetables, potatoes, and try a really crisp salad with French dressing as an accompaniment.
