1.Remove the meat from the lobster. Dice this.
2.Mash the coral rather well.
3.Make the white sauce.
4.Add the coral and stir in well.
5.Add the lobster meat, cream and sherry. Heat gently.
6.Pile into 4 hot dishes or serve on a bed of rice.
Ingredients:
1 large and 2 medium hen lobsters*
2 tablespoons cream
1 tablespoon sherry
½ pint white sauce
* The hen lobster has a bright red roe or coral. The fishmonger will pick this out for you or you can tell a hen lobster by the fact that is has a very wide tail.
Cooking time: 15 – 20 minutes
