1. Wash the apples well and with a sharp knife slit the skin round the fruit.
2. Put a piece of greased paper over the rack or trivet and stand the apples on this.
3. Put in the water, fix the lid and bring gradually to pressure.
4. Lower the heat and cook for 3 minutes (preferably at 5 lb. pressure).
5. Be very careful the pressure does not get too high, otherwise the apples will become “fluffy” on the outside before being cooked through to the middle.
6. Reduce pressure immediately.
7. The water at the bottom of the cooker has a very good flavour and could be thickened, sweetened and served as a sauce.
Ingredients:
large cooking apples
sugar to taste
1/4 pint water
Pressure cooking time: 3 minutes
