Roast Chicken In Foil With Oyster Cracker Stuffing

1. In small saucepan boil giblets in water until tender; drain; reserve ½ cup liquid. Chop giblets finely; put in mixing bowl.
2. Preheat oven to 350ºF. Line roasting pan with large square of heavy aluminium foil.
3. Prepare Oyster Cracker Stuffing: Add green pepper, scallions, crumbs, parsley, garlic, pepper and oyster to giblets. Toss lightly. Add reserved liquid and ¼ cup of the butter; mix well.
4. Loosely fill neck and body cavity of chicken with stuffing.
5. Place chicken on foil in pan; brush with remaining butter. Fold up foil to form package.
6. Roast in preheated oven for 2 hours. Open foil. Roast for 30 minutes longer, or until tender.

Ingredients:

5- pound roasting chicken
1 cup water
½ cup chopped green pepper
½ cup chopped scallions
2 cups soda cracker crumbs
1 tablespoon chopped parsley
2 cloves garlic, crushed
1 teaspoon salt
¼ teaspoom pepper
1 cup oyster, freshly shucked and drained
½ cup melted butter

Serve 4 or 5
