Mix ingredients for stuffing together.
Cut the meat away from the bone for 2-3 inches.
Press stuffing in the cavity making it fiat and neat.
Put the stuffed chops under grill.
Cook on both sides until crisp and brown.
Serve wirh potato crisps, grilled tomatoes, peas and watercress.
Ingredients:
4 lamb cutlets or lamb chops
for the stuffing:
2 large or 4 small skinned sausagess or 4 oz. sausage meat
teaspoon grated lemon rind
1 egg yolk
2 teaspoons chopped parsley
pinch mixed herbs
seasoning
